Ingredients

For the Almond Tofu:

  • 7g agar powder
  • 500ml whole milk
  • 100ml heavy cream
  • 80g sugar
  • 2 tsp almond extract
  • 1/4 tsp vanilla extract
  • Pinch of salt

For Serving:

  • Mixed fresh fruits (lychee, mandarin, kiwi)
  • 100ml water
  • 50g sugar
  • 1 tbsp honey
  • Fresh mint leaves
  • Sliced almonds for garnish

Cooking Instructions

  1. Prepare Agar: Sprinkle agar powder over 100ml of the milk in a small bowl. Let stand for 5 minutes to soften.
  2. Heat Mixture: In a saucepan, combine remaining milk, cream, and sugar. Heat over medium heat, stirring until sugar dissolves.
  3. Add Agar: Add the agar-milk mixture to the saucepan. Bring to a gentle boil, whisking constantly until agar completely dissolves.
  4. Flavor: Remove from heat and stir in almond extract, vanilla extract, and salt. Strain mixture through fine mesh to remove any lumps.
  5. Set: Pour into a square dish or individual molds. Cool to room temperature, then refrigerate for at least 2 hours until firm.
  6. Make Syrup: Combine water, sugar, and honey in a small saucepan. Simmer until sugar dissolves. Cool completely.
  7. Serve: Cut almond tofu into cubes. Serve with fresh fruits, drizzle with syrup, and garnish with mint and sliced almonds.
