Ingredients

For the Beef & Noodles:

  • 400g fresh egg noodles
  • 300g beef sirloin, sliced thin
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp white pepper

Vegetables & Sauce:

  • 1 red bell pepper, sliced
  • 1 cup bean sprouts
  • 2 carrots, julienned
  • 3 green onions, cut into sections
  • 3 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 3 tbsp vegetable oil

Cooking Instructions

  1. Marinate Beef: Combine sliced beef with soy sauce, cornstarch, sesame oil, and white pepper. Marinate for 15 minutes.
  2. Cook Noodles: Boil fresh egg noodles according to package directions until just tender. Drain and rinse with cold water to stop cooking.
  3. Stir-Fry Beef: Heat wok over high heat. Add 1 tbsp oil and stir-fry marinated beef for 2-3 minutes until just cooked. Remove and set aside.
  4. Cook Vegetables: Add another tbsp oil to wok. Stir-fry bell pepper and carrots for 2 minutes, then add bean sprouts for another minute.
  5. Combine Sauce: Mix oyster sauce, soy sauces, and sugar in a small bowl.
  6. Finish Dish: Add noodles to wok with remaining oil. Add sauce mixture and toss to coat. Return beef to wok, add green onions, and toss everything together for 1-2 minutes until heated through.
