Our Dan Dan sauce is made fresh daily using authentic Chinese sesame paste and premium Sichuan peppercorns for the most authentic flavor profile.
Ingredients
For the Noodles & Pork:
- 400g fresh wheat noodles
- 200g ground pork
- 2 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tsp dark soy sauce
- 2 tbsp vegetable oil
- 2 green onions, chopped
For the Dan Dan Sauce:
- 3 tbsp Chinese sesame paste
- 2 tbsp chili oil with sediment
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Chinese black vinegar
- 1 tsp sugar
- 1 tsp ground Sichuan peppercorns
- 2 cloves garlic, minced
- 1/4 cup hot noodle cooking water
Cooking Instructions
- Prepare Pork: Heat oil in wok over medium heat. Add ground pork and cook until browned and crispy, breaking into small pieces. Add Shaoxing wine and soy sauces. Cook until liquid evaporates. Set aside.
- Make Sauce: In a large bowl, whisk together sesame paste, chili oil, soy sauces, vinegar, sugar, ground Sichuan peppercorns, and minced garlic.
- Cook Noodles: Bring a large pot of water to boil. Cook noodles according to package directions until al dente. Reserve 1/4 cup cooking water before draining.
- Thin Sauce: Add hot noodle cooking water to the sauce mixture and whisk until smooth and well combined.
- Assemble: Divide sauce between serving bowls. Add hot noodles and toss to coat evenly.
- Serve: Top with cooked pork and chopped green onions. Serve immediately while hot.
