We use only the ripest Philippine mangoes for their superior sweetness and creamy texture, creating a pudding that truly celebrates this tropical fruit.
Ingredients
For the Mango Pudding:
- 3 large ripe mangoes, peeled and chopped
- 1 packet (7g) unflavored gelatin
- 3 tbsp warm water
- 100ml whole milk
- 60g caster sugar
- 200ml heavy cream
- 1 tbsp fresh lime juice
For Garnish:
- 1 ripe mango, diced
- 100ml coconut cream
- 1 tbsp powdered sugar
- Fresh mint leaves
- Toasted coconut flakes (optional)
Cooking Instructions
- Prepare Gelatin: Sprinkle gelatin over warm water in a small bowl. Let bloom for 5 minutes until spongy.
- Make Mango Puree: Blend chopped mangoes until completely smooth. Strain through fine mesh to remove any fibers. You should have about 400ml of puree.
- Heat Milk: Warm milk and sugar in a saucepan until sugar dissolves. Remove from heat and whisk in bloomed gelatin until completely dissolved.
- Combine: Mix mango puree with the milk mixture. Add lime juice and stir well. Let cool to room temperature.
- Add Cream: Lightly whip heavy cream to soft peaks. Gently fold into mango mixture until well combined.
- Set: Pour into serving glasses or molds. Refrigerate for at least 4 hours until completely set.
- Serve: Top with diced fresh mango, whipped coconut cream, mint leaves, and toasted coconut flakes if desired.
