Our red bean soup achieves the perfect balance of sweetness and texture, with beans that are tender but still hold their shape.

Ingredients

For the Soup:

  • 200g dried adzuki red beans
  • 1.5 liters water
  • 100g rock sugar or brown sugar
  • 1 piece dried tangerine peel (optional)
  • Pinch of salt

For Serving:

  • 200ml coconut milk
  • 2 tbsp sugar (for coconut milk)
  • Extra coconut milk for drizzling

Cooking Instructions

  1. Soak Beans: Rinse red beans and soak in water for 2 hours or overnight. Drain and rinse again.
  2. Cook Beans: Place beans in a large pot with 1.5 liters of fresh water. Add tangerine peel if using. Bring to boil.
  3. Simmer: Reduce heat to low and simmer for 1-1.5 hours until beans are very tender and starting to break down.
  4. Sweeten: Add rock sugar and a pinch of salt. Stir until sugar dissolves. Simmer for another 10 minutes.
  5. Prepare Coconut Milk: Warm coconut milk with sugar until sugar dissolves. Keep warm.
  6. Serve: Ladle hot red bean soup into bowls. Swirl in sweetened coconut milk and serve immediately.
