Our red bean soup achieves the perfect balance of sweetness and texture, with beans that are tender but still hold their shape.
Ingredients
For the Soup:
- 200g dried adzuki red beans
- 1.5 liters water
- 100g rock sugar or brown sugar
- 1 piece dried tangerine peel (optional)
- Pinch of salt
For Serving:
- 200ml coconut milk
- 2 tbsp sugar (for coconut milk)
- Extra coconut milk for drizzling
Cooking Instructions
- Soak Beans: Rinse red beans and soak in water for 2 hours or overnight. Drain and rinse again.
- Cook Beans: Place beans in a large pot with 1.5 liters of fresh water. Add tangerine peel if using. Bring to boil.
- Simmer: Reduce heat to low and simmer for 1-1.5 hours until beans are very tender and starting to break down.
- Sweeten: Add rock sugar and a pinch of salt. Stir until sugar dissolves. Simmer for another 10 minutes.
- Prepare Coconut Milk: Warm coconut milk with sugar until sugar dissolves. Keep warm.
- Serve: Ladle hot red bean soup into bowls. Swirl in sweetened coconut milk and serve immediately.
