Aberdeen Street Social Recipe

Our sesame balls use premium glutinous rice flour and house-made red bean paste, creating the perfect balance of textures that defines this classic dessert.

Ingredients

For the Dough:

  • 200g glutinous rice flour
  • 150ml warm water
  • 2 tbsp sugar
  • 1 tbsp vegetable oil
  • 1/4 tsp salt

For Assembly & Frying:

  • 200g red bean paste
  • 1/2 cup white sesame seeds
  • Oil for deep frying
  • Extra water for sealing

Cooking Instructions

  1. Make Dough: Dissolve sugar and salt in warm water. Gradually add glutinous rice flour, mixing until a smooth dough forms. Add oil and knead until elastic. Cover and rest for 30 minutes.
  2. Prepare Filling: Divide red bean paste into 8 portions and roll into balls.
  3. Shape Balls: Divide dough into 8 pieces. Flatten each piece, place a red bean ball in center, and seal edges completely. Roll into smooth balls.
  4. Coat with Sesame: Lightly dampen each ball with water and roll in sesame seeds, pressing gently to adhere.
  5. Deep Fry: Heat oil to 320°F (160°C). Fry sesame balls in batches, turning frequently, for 8-10 minutes until golden brown and expanded.
  6. Drain and Serve: Remove and drain on paper towels. Serve warm for the best texture contrast.

Chef's Tips from Aberdeen Street Social

Dough Consistency

The dough should be smooth and pliable. If too dry, add water gradually; if too wet, add more flour.

Sealing Technique

Ensure the dough is completely sealed around the filling to prevent bursting during frying.

Oil Temperature

Maintain moderate oil temperature. Too hot and the outside burns before the inside cooks; too cool and they absorb oil.
