Chef's Tips from Aberdeen Street Social

Crispy Coating

Double-fry the pork for extra crispiness - first at lower temperature to cook through, then high heat to crisp.

Sauce Balance

Taste and adjust the sauce - it should be equally sweet and sour with a hint of saltiness.

Timing is Key

Add the fried pork to the sauce just before serving to maintain the crispy texture.
